This is a "problem" inherent to literally every Blender course ever made. But do not despair! It doesn't have to be a show-stopper.
These projects feature concepts and methods that have been around for a long time. The vast majority a each workflow is applicable to all Blender versions and even other 3D packages. For intermediate Blender users it shouldn't be more than a minor inconvenience to follow these projects with a different version of Blender.
If you're newer to Blender and get easily tripped up by the frequently evolving Blender UI, I strongly encourage you to use the version of Blender featured in this course's videos. Just look in the bottom right corner of the Blender UI for the version in a given video. Then download that version from here, where all Blender releases are available.
Don't limit yourself to courses that were recorded with the current version of Blender. There's TONS of amazing, still-relevant tutorials spanning years of Blender releases. For more about learning through various Blender versions, please see this article.

100% Blender. I only use addons that are included with stock Blender (like Node Wrangler, Loop Tools, Bool Tool). No other apps are featured or necessary. Except a web-browser if that counts...
Yes! Each video has a corresponding .srt caption file. They're English only but if you're looking for other languages, there are many free online tools for translating .srt's. I've tested the Subtitle Edit app and it works well (and free).

No, the exercise feature is reserved for CG Cookie members. We can help you transfer to membership if you're interested (see the FAQ below for more details). Alternatively you're welcome to joint the discord and post your work there (again, see the FAQ below for more info).
- Creation Time: Starting from a blank Blender scene to finishing with a rendered still frame or prepped to render a sequence.
- Total duration of each chapter: Videos play in real time to demonstrate a two-hour (or less) workflow.
The 2 hour timeframe does NOT mean:
- Watch time + creation time: If you watch a chapter and then apply what you've learned, that will be closer to 4 hours.
- Sequence render time: Sequences can take a couple hours or even over night depending on Eevee vs Cycles, scene complexity and/or computer specs.
